BelgiumWell the two main areas in Belgium are Freyr and Berdorf.
Freyr is by all accounts polished and very busy sport limestone, and not as good as many other limestone crags in Europe, with less reliable weather, so may be best to bypass. Berdort is bolted Sandstone, but has some odd access arrangements. Again probably worth bypassing. I've not been so stand corrected, but this seems to be a generally held opinion.
NetherlandsNaff all. Some impressive looking climbing walls though, if you fancy a fix, but plenty of other activities in Holland to pass your time
GermanyNot been, but Frankenjura is the main climbing area, plus plenty of others.
SwitzerlandShitloads of climbing, everywhere. The country is basically a mountain. Not far away just over the border is Chamonix, which has every form of climbing ever conceived (except maybe DWS). There is loads of sport climbing in the Arvre valley between the two too.
FranceFor bouldering Font is the essential tick, accessible by train from Paris. More info than you ever need to know here

Exact details of what's around Dijon, not sure, but I think there's a fair bit of sport.
