Hi, I'm looking at over-nighting on the Mount-Aux-Sources plateau (via Sentinel car park and chain ladders). Are there any security concerns on this route - there will only be two of us.

There was an attack about 30km south of there fairly recently. Go and have a look at the thread Viking posted, though. The latest updates are posted there.
Also be aware that the ladders are currently closed. I don't know what the latest is, they could be open again (or perhaps they still haven't started the work) - but maybe contact Witsieshoek and check up on the latest status.

I was at witsieshoek fairy recently and they are apparently keeping one of the ladders open whilst changing the other so no worries about that. There is always the gulley if all else fails.

When we climbed the Sentinel in 2014, we slept close to the plato in Crows Nest Cave.
In my experience the happenings in that area forced us to be vigilant for theft
I agree, check the posts for more recent activity and probability, but prepare logically as well.
